How to carve roast pork | Food Techniques | Mike Robinson | BBC

A chined loin of pork can be carved in the following way:
- Cut through the fat underneath the crackling using a sharp knife and pull the crackling away from the loin in one sheet. Set aside.
- With your knife flush to the bones of the loin, cut the meat from the bones.
- Carve the loin meat into medium-thick slices and serve.
