Mine are split into two banks for this very issue. The second automatically kick-in when it gets overcast. Mine can produce 40A max however I have 80A available. Its terrible in winter all of it using lifepo4 batteries.

I was using data from the Finnish meteorological Institutes weather stations in Helsinki, a decade ago.

The infra red radiation sensors showed the same behavior as you saw : with full cloudiness and/or rain, the IR energy dropped to roughly 10% of what it'd be without clouds.

I'd add that the IR energy at midday of a cloudy day in mid summer, was the same as that of a cloudless day around the shortest daylight days in late December..
So the IR energy of a cloudy summer day can be like that of a sunny day in winter.

Try using bifacial panels I’m always interested in seeing if they really work on cloudy days as advertised.

But if you live in s hot place i they work best on partly cloudy days because when its full sun it gets too hot and they go down by 25 %
