Shopping Tips: Pots and Pans

Buying cookware can be tricky… Don't be tricked into buying something that looks pretty, but can't stand up to the harsh heat and grind of daily use. ALSO, look out for something that has all the same specifications as the good stuff, but cuts corners on the details which make the pan harder to clean or less durable for long term use.

The details in this list are all things that I learned the hard and expensive way. Hopefully this saves you the time, trouble, and money of replacing your pots and pans every 2-3 years.

Pay attention to:
Seams (Not only do these create a structural weak point and an extra place for grime to collect, but they also indicate the pan may be made with multiple materials, skimping on cost, quality, and performance)
Ease of Cleaning (I promise you, nothing is easier than putting a pan in the dishwasher… And babying your non-stick pan by scrubbing a mess off with a sponge will take much longer than just grabbing a stiff brush and going to town on stainless steel)
Handles (Make sure there is a grip that is shaped to work with an oven mitt and one that has rivets/welded connections that won't come loose over time)
Sealed Rims (Open rims have been proven to split/recede after extended use and dishwashing – and rolled rims allow gunk and grime to build up and deteriorate/rust the pan)
I like Hestan because even if you don't cook everyday for work like I do, they also have pro-bond stainless and copper-bond sets which also feature the same fully clad pans with, flush rivets, and sealed rims.

I reached out to Hestan for help with this video because their pans are top of the line and feature a few things that you won't find anywhere else. I LOVE their flush rivets for easier cleaning, and the nanobond set is way more durable than stainless steel alone. You had me sold with those pans till I heard the “$200 off” that’s a good indication that it is way out of my price range, especially if they’re just casually discounting how much I would spend on a whole set😭. Guess I’m staying with the ole cast iron for now.

lol, I love how this is looking for 'new' pans, but these are all the things I look for in new to me secondhand pans. Thrifting has found my favorite pans

If you’re looking for a full SET of cookware, I would highly recommend stainless steel over ceramic or non-stick. Get ONE non-stick for scrambled eggs, but for anything you cook with oil, stainless is going to give you a better cook, it will last longer, and it will be much easier to clean. But not all stainless steel is created equal. For pasta the most important thing imo is to get a pan with with decent size, high sides and preferably a lid. Making a big family pasta in those is super satisfying

i have a set of 3 pans with only one handle that you clip on and it’s actually quite handy. i don’t flip my food on a pan so i don’t always need a handle, it takes less space on the stove and in the cupboard as you can pop handle off. also my favourite chicken recipe says to fry it first for a minute and then finish cooking in the oven on the same pan so i don’t need to worry about any plastic or silicone on the handle

That's it. I'm scrapping the last of my coated pans. One thing I look for are handles that are split where they're attached because they don't get hot.

Idk what a clad pan is, but the reason for the bottom is probably a sheet of copper that integrated for better heat spreading

my biggest biggest regret with kitchenware is just how "solid" they are. ended up buying new and more expensive ones for everything because handles becoming loose because they were screws or a food processor that has a million small parts and weird angles which made cleaning horrendous
