strawberry chocolate chip ice cream! it’s dairy free, vegan, and refined sugar free, and so refreshing.

ingredients:
•1 (13.5oz) can full fat canned coconut milk
•1 cup raw cashews (or 1/2 cup cashew butter if you don’t have a high speed blender)
•1/3 cup pure maple syrup or raw honey
•1 tsp pure vanilla extract
•1/4 tsp pink Himalayan salt (use 1/8 tsp if using salted cashews/cashew butter)
•2 cups organic strawberries
•1/2 cup chocolate chips/chunks/bits (i use dairy free and refined sugar free chocolate)

instructions:
1. add all of the ingredients (except for the chocolate) to a high speed blender and blend until smooth and creamy.
2. for regular ice cream — pour the ice cream mixture into a standard loaf pan then stir in the chocolate pieces. place the loaf pan in the freezer until the ice cream is frozen then scoop and serve!
3. for soft serve ice cream — pour the ice cream mixture into ice cube molds and place in the freezer until frozen. once frozen, add the ice cream cubes to a high speed blender and blend until smooth and creamy (it helps to let the ice cream cubes defrost in the blender for a 5-10 minutes before blending). once blended stir in the chocolate pieces then serve and enjoy!
