I worked for a Queso Fresco plant the cheese is not designed to melt like a normal processed cheese. Try using Oaxaca cheese next time it melts better. Great videos keep up the good work

Hey, I would eat it with chips and 10 or so napkins. It looked delicious. Vinegar curdles milk somewhat. That is how you can make buttermilk in a pinch. You always do a good job and you have great videos. We all learn together. I am 76 and still learning. Until next time 😊😊.

Sodium citrate to get that smooth cheese consistency like in velveeta. But since you added vinegar, try baking soda. Might have a similar effect but it’ll at least neutralize the acid. Lmao you said add vinegar to prevent clumping 😂😂😂 love it

If you want a vinegar zap add mustard instead. It contains stabilizers and will promote a homogenous consistency.
