Reflowing solder requires temperatures more than 180 Celsius. For a transistor or a voltage regulator like the L7805CV to reach these tenperatures on its own, it would require dissipating an immense amount of power, which far exceeds the thermal limits of these components. In real-world scenarios, they have built-in thermal protection and will shut down or degrade long before reaching such high temperatures. The back of an L7805CV can get hot during normal operation (it may reach around 70-90°C under heavy load), but it won’t reach reflow temperatures without destroying the IC itself.
