Can we make 25 meals for $40? This week I am CHALLENGING MYSELF TO COOK FOR MY FAMILY FOR ONLY $40! HOW MANY MEALS CAN I MAKE? I am doing another EXTREME BUDGET grocery challenge! We will be making delicious, easy, and affordable EXTREME BUDGET meals for my family of 4! We've done it before but is it still possible? It's easy! It's affordable! It's delicious!

The two extra hotdogs sliced up together with the half of leftover diced onions sautéed together along with 3-4 eggs makes an awesome brunch or lunch for 4. Prep up the remaining tator tots with it and you have a yummy dinner for 4

I made the meat for the Philly cheesesteak and put scooped it in a toasted hot dog bun with a slice of provolone. It was out of this world. Love it!!

I’m from Minnesota, we call it Tater Tot Hotdish and we use cream of mushroom soup, not gravy, gotta try the southern version!

I do chicken sandwiches but freeze the patties. I buy whole chicken breast and slice them at an angle against the grain of the meat. But I used a five breading cycle plain flour (self raising it is ground thinner) then a mix of egg and hot sauce then season flour (2 par flour one part corn starch) garlic, onion cyan pepper, black pepper, chili powder and lemon pepper) then egg mix then Panko then seasoned flour then let it wait for a minute or two then back in the seasoned floor. I cook them till the breading is set but not fully cooked Then I set them out on sheet pan to freeze before bagging up I generally do 24 at a time so we can have then 4 times over the next 2 months.

Looks good! FYI, if you use Wal-Mart grocery pickup and the Great Value brand isn't available, they will give you the name brand at the Great Value price. Gotta love that!

Thank you Mandy! Walmart Neighborhood market is on my path home so to save gas I’ve been shopping there for a few months so I can totally identify with the Great Value sold out frustration. One hack I found at my store is that there are lower cost than name brand bread aisle, fresh buns in the bakery section. As a bonus, they seem “fancier”. Also they make great sandwich buns.

I know a lot of people do not know you can make homemade corn dogs out of very few ingredients. Just something to go along with your last bit of tater tots, for a quick lunch.

With gas prices at $6. a gallon here in our area all these designed cuts and still eating good flavorful food is a real bonus. Thanks for more suggestions on how to cut our grocery budget.
