I ate a bunch of this going through Tanzania, absolutely divine when hungry, especially with the local hot sauce. At places for trucks to stop there were a bunch of people making this, precooked chips in like a warmer thing then would put the chips with freshly chopped shallots in a small bowl over a few hot coals(charcoal) and pour beaten eggs over it. Always served with the same side dish but instead of chopped all the ingredients were finely sliced on a mandolin.

I’m Rwandan but chipsy mayai is so good 🤤 btw you should try to make kachumbari with chili paste instead of sliced chilis, my mom puts chili, garlic, onion and oil in a blender, and it’s done !
