The BEST soaked & baked oatmeal!

Some variation of eggs is what’s for breakfast most days in our house. But changing things up a few days each week helps a ton to keep everyone happy!

When it comes to what we eat for breakfast, getting high quality protein and fat alongside carbs is a non-negotiable for me. That first meal of the day really is so important, especially for growing bodies and brains!

This soaked and baked oatmeal has been one of our favorites for years! I love that it’s not just oats or even just soaked oats but there are several eggs and a high quality fat in there as well.

Ingredients:

* 2.5-3 cups oats
* 1.5 cups milk, yogurt, buttermilk, or kefir (for soaking). Alternatively, you could use water plus 1-2 tbsp of apple cider vinegar or lemon juice
* ½ cup coconut oil or butter, melted
* 4-5 eggs
* ¼ cup honey or maple syrup
* ½ tsp salt
* 1 tsp cinnamon
* 2 cups mix in’s (berries, rhubarb, chopped nuts, bananas, apples, coconut flakes, etc)

Directions:

- 12-24 hours before making, place oats in a bowl ON THE COUNTER and mix with either the milk or fermented dairy or water plus acid. The oats should be fully soaked but not drowning in liquid.
- After soaking, add the rest of the ingredients and mix well until everything is incorporated.
- Pour into a greased 9×13 baking dish.
- Bake at 350 for 30-35 minutes.

Serve as is or pour some fresh milk over the top for a delicious start to the day!
