I hope you all enjoy this easy and delicious Al Pastor marinade. It will transform your tacos no matter the protein. Can I get an Oh, Yeah!!!! Lots of Corny love, Stephanie

Ingredients
4-6 Chiles Guajillo, California, or New Mexico Chile
1-2 Chiles Pasillas
1 Box of Achiote (3.5 oz)
1 Bay Leaf
1 Tablespoon Mexican Oregano
1/2 Tablespoon Cumin
1 1/2Teaspoon Salt
3-4 Garlic Cloves
1/2 Teaspoon Ginger Powder
1/4 Teaspoon Cinnamon
1/4 Teaspoon Clove Powder or 2 Cloves
10 Pepper Corns or 1/2 Teaspoon Black Pepper
3/4 Cup Apple Cider Vinegar or White Vinegar
1 Cup Orange Juice
1 Can Pineapple juice or 3/4 Cup Pineapple Juice
Optional- Juice of chipotle or a Chipotle Pod
Add 1/4- Cup canola oil when marinading

Protein Marinade Time Recommendation
Pork, Beef, and Chicken - Minimum 12- 24 Hrs
Seafood- 1 Hr
Tofu- Over Night
*Shrimp cooks easily with citrus and vinegar marinade 20-30 Mins

Tips
*If your Chiles are small use the larger quantity recommended
*If you run out of marinade you can add 1 cup of orange juice, 1 Can pineapple Juice, 1/4 Apple cider vinegar to your blend.
*I used marinade all marinade for 6 Pounds of Sliced Pork Butt and 3 Chicken Breast
*My recommendations to adjust the salt to your taste. Other than that, this recipe has a well-balanced flavor and seasoning to satisfy even my picky eater, Oh yeah!

I made this recipe today. It was WONDERFUL!!!! I have to tell you what a blessing your channel is for me. I’ve never really cooked like this before because Ive always been too intimidated. But you saying to make it comfortable for my home gave me the incentive to try. Life being what it is Ive had the hardest time in my life over the past 3-4 years. Lots of loss and changes. Im coming out of the darkness and have found cooking. Thank you so much for helping me find some joy in life again. You and Cloud are greatly appreciated. I like the short, quick, get right to it videos but I LOVE the longer ones when you go into more detail and have more interaction with your sister. I've made this twice so far, and it's come out AMAZING both times! Marinated a pork shoulder for 30 hours then cooked in in my crock pot. Mad pulled pork tacos with Navajo fry bread. OH MY GODS! Thank you so much for sharing this recipe! ❤❤❤❤❤

There's a company called Badia, and they have an excellent selection of spices, chilies, marinades, etc. I used their Sour Orange in puerco pibil and it came really good. I think it could work with the pastor, too. Badia also has Mexican/Central American oregano, which is quite different from Mediterranean oregano, and makes all the difference in the flavor profile of the recipe/dish. Oh my goodness, thanks for this recipe. I know how to make a lot of marinades from our culture but it's great to see your take because frankly, you are always spot on with flavor profiles. This will be added to my arsenal of sauces. Love the hair also, you are knocking it out of the park with that sassy shag. Cloudy, I miss seeing your sweet face as well. Love you two girls.

This is hands down the best marinade I have ever tried and made. Everyone here has been raving on how delicious my pastor pork meat tasted. I didn’t have pineapple juice so I used all orange and it was wonderful. Thank you Saludos

I used your recipe as my guide. I used New Mexico Chile thanks fir your guidance. We loved the Taco Al Pastor better than most restaurants. I have a vertical rotisserie and asked for it fir Christmas to make these tacos.
