What is the best CPU for LGA 2011-3 socket? 2620v3, 2630v3, 2630lv3, 2640v3 or 2678v3?

I've got a Dell Precision T5810 with an E5-1620 v3. What faster CPU would you recommend, considering that I need single-core performance as a priority? I'm not a fan of high TDP, especially since it's working as a home server running my own three server software (they use 5 to 8 threads each).

I'm very much considering that 2683 v3, it's £64 here and seems like a brilliant CPU for workstation tasks.
seems like X99 stuff has come down in price a lot since I last looked. I'll be coming from X79 with 2650 v1.

Update xeon e5 2678 v3 after YouTubers call it budget king xeon v3.
It becomes much more expensive than higher clock and core xeons od higher models.
And is no longer a budget wise xeon v3 today.
Actually a xeon e5 2666v3 for 1/4 of the price of a e5 2678v3 is now one of the new sweetspot.
Since 2666v3 have the fastest all core base clock.. and second fastest all core boost clock second to the fastest 18 core xeon v3 (forgot the model its in 90s model and is the most expensive above all)

shouldn't look down on a cpu just cause it does not support ddr3 RAM. My concern is power draw. I prefer Xeons v3 or v4 long as the CPU tdp is under 115W. That lower power 55W xeon still has a use also, if using as a NAS build. Since it would be lower power draw for a system that could be running 24/7.

Currently using an lga 2011-v3 asus X99A-2 board with a 6800k running at 3.8ghz.. any cpu you recommend upgrading to? It's mainly used for gaming. The 6800k is serving me pretty well, but is struggling to keep up nowadays. The 1080GTX card is hanging on for now, but is nearing minimum system specs with recent games too.
