We are on Shodoshima island in Kagawa Prefecture, which boasts a range of soy sauce breweries.
Japan's shoyu soy sauce is known all over the world, but only 1% of total production employs the traditional kioke method with large wooden barrels.
Each brewery is unique, offering soy sauce with a distinct color, aroma, and flavor that matches a select range of ingredients.
Yamaroku Shoyu has been made for 150 years, and its 5th generation artisan Yasuo Yamamoto works to preserve the history and flavor of Japan, to pass on to the next generation.
