In this video I will show you how to air dry herbs in the traditional, time-honored way. This method of air drying preserves the essential oils in the herb and gives a more tasty product packed with flavor. Other methods, like dehydrators and ovens, are a little bit harsh on the plan and contribute to the evaporation of not just moisture but also essential oils. This method has risks, we will discuss the risks and the suitability of this method for your situation.

My grandmother use to put herbs on paper plates and on a window ledge. She took some and put in the car in the full sun on the dash . It worked for her and never lost flavor or molded.

One recommendation. Use a brown bottle to place your finished product in. It will help preserve them. Just like during the drying process you don't want sunlight. The brown bottle will protect them from light.

I'm able to have fresh green dill all year round, by a fool prove method that serves me well.
I cut it fairly fine and put in saved yogurt containers, not to tight, somewhat loose and put them into the freezer.
It freezes well, this way I have fresh dill on salads or where dill used for flavor.

I have done quite a bit of drying of herbs in my dehydrator and I’m not satisfied with the results. As you said you lose too much of those volatile oils. My wife and I have been talking about trying the hanging method next season so this was a timely video!

cheap furnace filters, box fan and bungie cords--lay herbs on the filters and bungie to the fan -dries them out quickly --saw alton brown do this --it works!!! :)--you can save the filters(just protect from dust and reuse many, many times)-retains the color and flavor:)

here in southern Alberta where the humidity level is so low that many people have to humidify their homes in winter, hanging herbs is actually a really easy and excellent way to preserve them. I do this every year and have yet to lose any he4bs to mould. I suppose in areas where the humidity is much higher, one could use a gentle fan to help dry their herbs while hanging. 🤔

This method has always worked for me as long as the house relative humidity is at or below 50%. Cut and place herbs in a brown paper lunch sack and place on top of your refrigerator. The slight heat given off the frig. and slight air movement due to convection will be just enough to slow dry them as long as they are not tightly packed. The bag should be closed with a single fold. This has worked for all our herbs including catnip. Each herb gets it's own bag.
