RAMEN NOODLE SALAD! Ridiculously addictive and crunchy, with very little chopping so it’s FAST. Toasting the ramen noodles first makes all the difference! {Sunday Salads, Episode 13}

The classic ramen noodle salad recipe calls for mixing the ramen seasoning packet with a cup of oil and sugar for the dressing; instead, I swap a simple honey soy dressing, making it fresh and DELISH. Of course I kept the OG mandarin oranges because they are one of the best parts!
YOU’LL NEED
-1 package ramen noodles (3 ounces)
-⅔ c sliced almonds
-2 T sesame seeds
-1 bag coleslaw mix (16 ounces)
-1 ½ c shelled frozen edamame, thawed
-1 c shredded carrots (I use bagged)
-4 green onions, thinly sliced (both white and green parts)
-1 can mandarin oranges, rinsed and drained
For the Dressing:
-¼ c rice vinegar
-3 T extra-virgin olive oil
-2 T honey (or agave if vegan)
-1 T low-sodium soy sauce
-¼ tsp kosher salt
-¼ tsp black pepper
Toast the noodles, almonds, and sesame seeds. Toss everything together with the dressing. DEVOUR!
