While it's not quite summer yet, I thought I'd get into the summer mood with a bit of sorbet. Super low in calories and fat -- it is pretty much 100% fruit after all -- this makes a great, light, refreshing dessert or snack. If the fruit you have is very sweet and ripe you can even skip the sugar completely. You have to be patient while it's freezing, but it's definitely worth it!

You're right - it should have been much more smooth... unfortunately the mango was *really* unripe. To be fair, this is actually more like a granita, which is clumpy like this, so I actually changed the title to reflect that - thanks :)

That quantity in the bowl wasn't the final yield - I had it stored in a giant plastic tub
