There is just something special about receiving a homemade Christmas gift! These are some of my favorites and some I have been making for years. I hope you give them a try and Merry Christmas!

Microwave Peanut Brittle

Ingredients
1 cup sugar
1/2 cup light corn syrup
1 1/2 cups roasted, salted peanuts
1 tbsp butter
1 tsp vanilla
1 tsp soda

Instructions
Combine sugar and syrup in a 2-quart microwave safe mixing bowl. Microwave on high for 5 minutes.
Stir in peanuts. Microwave 2 to 5 minutes, stirring after 2 and 4 minutes, until syrup and peanuts are lightly browned.
Stir in butter, vanilla and soda until light and foamy. Spread out quickly on a sheet tray covered with aluminum foil. I do not spray non-stick on the foil.
Do not be tempted to double the recipe because it will not work.

White Chocolate Party Mix

Ingredients
1 bag of pretzels
5 cups corn chex
5 cups rice chex
5 cups cherrios
2 cups peanuts
1 bag of plain M&Ms
2 bags of white chocolate chips
2 tbsp vegetable oil

Instructions
Combine first 6 ingredients in a very large bowl. Then microwave chocolate and oil and heat for 1 minute at a time until completely melted. Pour chocolate over mix and blend until everything is coated. Dump on a table lined with parchment paper and allow to dry.

Classic Almond Biscotti

Ingredients
3 1/4 cups all purpose flour
1 tsp baking powder
1/4 tsp salt
1 1/2 cups sugar
10 tbsp unsalted butter, melted
3 eggs
1 tsp vanilla extract
1 tsp almond extract
1 cup sliced almonds

Instructions
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
In a large bowl mix the melted butter and sugar. Add eggs, and extracts. Add the baking powder, salt, flour and almond slices.
Divide the dough into two pieces. Shape each dough portion into a 13 inch long x 3 inch wide x 1 1/2 inch thick log. Spacing the logs on the baking sheet 2 inches apart.
Bake for 30 minutes. Remove from the oven and cool on wire wracks for about 30 minutes.
Transfer the cooled logs to a cutting board. Use a serrated knife and cut logs into 1/2 inch wide slices. Arrange the slices cut side down on the same baking sheet. Bake for 10 minutes. Turn the biscotti over and bake additional 10 minutes. Transfer the biscotti to a wire rack and cool. Dip in chocolate for a delicious option.

Christmas Crack

Ingredients
1 cup unsalted or salted butter
1 cup packed light or dark brown sugar
40 salted saltine crackers (about 1 sleeve)
1 pkg milk or semi-sweet chocolate chips
additional toppings like nuts, candy or sprinkles (optional)

Instructions
Preheat oven to 350F. Line a large baking sheet with aluminum foil. Spread the crackers out on the foil in a single layer. Set aside.
In a small saucepan, melt the butter and brown sugar and cook over medium-high heat. Bring to a rolling boil. Reduce the heat to medium and continue to boil for 5 minutes (set a timer), stirring occasionally. Quickly pour over the crackers and spread to cover completely.
Bake for 5 minutes in the oven.. Remove from oven and immediately sprinkle the chocolate chips on top.
Let stand for 1-2 minutes or until the chocolate starts to look shiny and is soft enough spread evenly over the toffee. Top with additional toppings if desired. Chill int the refrigerator for about 2 hours to harden. Peel away from the foil and break into pieces.

White Chocolate Butter Puff

Mix Butter Puffed Corn and melted white chocolate together and spread on a table lined with parchment paper to dry. Break apart and enjoy!

Peanut brittle originated in Ireland or among the Celts. The Irish brought it to America around 1920s. Cool!🤗

Use the caramel you poured on the crackers, pour on the corn puffs. Mix, spread on lined cookie sheet put in the oven at 300. For about one hour stirring every 15 mins. Taste like cracker jacks.
