I really appreciate all the videos you do on fermentation. I'm wondering if I can season fermented beans before sundrying them. Also because it is winter now and there is hardly any sun, would i be able to mimic the sundrying process in the oven?

Hi there, me again.

Rewatching your videos about fermentation one question appeared: what characteristics of the fermented tofu told you they were not fine?

I also think this topic could get an entire video about it. In many cases, people are afraid of starting to ferment because they don't know enough or don't have no prior experience with the food to compare it with.

Could it the taste? Colour? Texture? Other visual or sensorial clues?
