Salad dressing deep dive - let’s talk Emulsifiers
These are what hold oil and vinegar together and create a creamy vinaigrette.
Some are better than others! Top 3 are:
*Dijon & grainy mustards
* honey 🍯
* eggs ) use pasteurized liquid yolks or cooked yolks pressed through a sieve
These common emulsifiers will give you a vinaigrette that is creamy and stays together for a long time.
Other options: miso paste, nut butter, soaked puréed cashews, mayonnaise,
Tahini, etc. These may not hold together as long or may have a different texture, but they’re great for variety- and who doesn’t love that!
