✤ Nezuko Chocopan
Chocolate Bread
⅓ cup (75ml) milk, warmed
¼ cup (50g) granulated sugar
1 large egg
½ teaspoon active dry yeast
1 ½ (180g) all purpose flour, plus 1 tablespoon for kneading
½ cup (40g) cocoa powder
¼ teaspoon salt
2 tablespoon (28g) unsalted butter, softened
1 large egg yolk, for brushing
Chocolate Shell
½ (60g) confectioner/icing sugar
2 tablespoon (10g) cocoa powder
1 tablespoon (15ml) milk
1 teaspoon (5ml) vanilla extract
1. To make the Chocolate Bread: In a stand mixer with a dough hook attachment, combine milk, sugar, one large egg, and yeast together. Sift in 1 ½ (180g) all purpose flour, cocoa powder, and salt.
2. Start the mixer on low, and gradually increase to medium-high. Mix until a soft and elastic dough forms, around 5 minutes, and scrape the bowl if needed with a spatula. Once soft, add in softened (room temp) butter, and mix until fully incorporated, around 4 minutes on medium-high speed.
Lightly dust flour onto a work surface, and form the dough on top into a ball. Place the ball of dough in a greased bowl and seal with saran wrap.
3. Let the dough rise until doubled in size, or when a floured finger is poked in the middle and the hole stays present, around 1-1h30min.
4. Degas the dough by punching, and form into a ball again. Place on parchment paper and slice a 2 inch line towards the center. Fold the cut side down to form a heart. Let the dough rise once more until poked and 80% of the dough springs back, around an hour.
5. Preheat oven to 350F, then bake the bread for 15-18 minutes, or until shiny, dark brown, and hardened.
6. To make the Chocolate Shell: combine all ingredients together in a bowl. Drizzle over the cooled chocolate bread. Let the shell harden in room temperature, around 10 minutes
7. Serve!
*Notes: there is no actual timing on how long dough will rise, just check for the signs I've added in the instructions. If you are in a hotter climate it will be faster, and vice versa
