re your notion that AI's 'learn' just like people so we can't argue that their use of other people's work is in any way unethical- if this is true then I can take a specific artists work, train my AI on their work alone and then I can use that AI to generate works in the style of that particular Artist.

I can then sell works in the style of that artist that directly compete with that Artists work and according to your view this would be entirely ethical? This is not a theoretical example- exactly this scenario has already played out in the visual art field where an Illustrators work was used to train an AI to make images in their style.

The problem with the idea that 'AI's learn just as people do' is that it's used to obfuscate the real ethical problems arising from these technologies. Take your voice, for example, I can train an AI to sound like you and then use your voice to say anything I want it to say- for example I might decide that your voice is perfect to narrate a documentary series I intend to make about ancient greece.

However even if the subject of the documentry is perfectly respectable and legitimate, would it be OK for me to use your voice without permission to narrate it? I don't think it would.

So the fact that I can train an AI on someones art or music or their voice does not make it ethical to then exploit them by using these personal expressions commercially without their consent.
