Ingredients:

4 big fish fillets (cut in half)
Andy's Fish Breading
Lemon Pepper (optional)
Old Bay Seasoning (optional)
Vegetable Oil
1/4 cup of yellow mustard

Heat oil to 375 degrees.

Wash fish and pat dry. Season fish with desired seasonings (optional...the breading is seasoned).

Massage fish with mustard. Put breading in a storage bag or paper bag. Place fish fillets in bag with breading (I did two at a time). Shake fillets in the breading.

Shake off excess breading and place fish in hot oil. Fry 2-3 pieces at a time, depending on the size of your pot or deep fryer. Fry until golden brown, 6-7 minutes. Remove from oil and place on a paper towel or wired rack. I put mine on a rack to avoid getting soggy.

Serve with hot sauce or desired condiment.

Been using this same recipe for all fried fish for years now. I dug a pond and stocked it with catfish. I go out there and throw a couple of scoops of cracked corn and here they come. I toss out a cast net and it is just packed with fish. I keep the little ones and release the rest. Remove the head and intestines and fry them whole. You talk about good.
