Great stuff, made it myself a couple of times, also made sure I added a few soft boiled eggs in the middle to fill that piece up, turned out delicious

Looks great; love the idea of adding the cured meat to add some fat inside the lean meat - I use a loin with the belly still attached myself, but that salami is going to taste good. I'd skip the cheese and the veggies personally, and keep the skin on - got to have that crackling!
