Hey all! Welcome to my cooking channel!

I decided to start this cooking channel as a way to preserve my recipes for my family. My nephew Nito is always calling me and asking how to cook things now that he is an adult living on his own. I thought what better way than to show him? So thank you Nito for the inspiration! I hope to add all your favorite recipes soon. Tia loves you!

This sauce is made with dried chili pods. It is used for making Tamales, Enchiladas, & Chile Colorado. This can be bagged up and frozen for later use as well, so make a big batch, freeze it, and always have it ready for your dishes. No more canned sauce for you!

Just a suggestion - those look like pretty mellow chiles where you can get away without taking out the seeds but the New Mexico varieties I have near me are not that way at all. If you leave the seeds during the boiling process it will release so much capsaicin it’s like pure pepper spray. Ruins the dish. If you have hot chiles make sure you get rid of the seeds before boiling and give a taste test before using the chili broth.

My family usually gets together during the holiday season to tamales. During this pandemic we are not making tamales this year. So I want to make tamales myself and deliver to my family. Thank you for your red chili recipe. I’m going to try now.

I was taught to toast the seeds of the chiles with comino seeds and add to the sauce, and no they are not bitter they add more flavor !

Out of desperation, I used a flour sifter to strain the red sauce, worked very well. Took much less time than a strainer.

Nice simple recipe! I love that you didn't remove all seeds and membranes like most others. WHY?? The tool that you used is a food mill, or Chinois (French). I've used one for many years for canning all kinds of things. Thanks for sharing!

The chili you used looks pretty clean, but I usually wash the chili and then when I add water I add clean new water to the blender. That's just me

i do use a strainer. i've never heard of putting salt in the very beginning.

Hello, I have been trying to make the Red Chile Tamale Sauce and my end result is always bitter. I used Chile Pulla and removed all seeds and veins. Any tips?
