Hey pho-ever friends! This authentic vegan pho recipe (also known as Vietnamese noodle soup) sits close to my heart and I’m so excited to share it with you guys today! I love pho, I grew up eating pho and pretty much everyone I know feels the same way about this beautiful bowl. When I transitioned to a plant-based diet, vegan pho was one of the first recipes I tried re-create! I’ve tried to make this vegan pho recipe as authentic as possible and with the help of my Mum and sisters, I think its pretty authentic! In Vietnamese, we call vegan/vegetarian pho as pho chay. I really do hope you guys enjoy it and as a little bonus, I’ve included two extra recipes at the end on how to make a vegan Vietnamese iced coffee and a Vietnamese avocado smoothie! Again, I’m so excited to show you guys how much delight a bowl of pho can bring to your lives!

I noticed you discarded dried shiitake soaking water - would it be ok to add it to the soup instead to increase umami?

I don't know how you made the presentation so pretty! I'm curious as to why you didn't use lemongrass, and if you would recommend leaving it out. I tend to like it. Thanks for sharing, can't wait to make it ^^
