Lightning probably oversimplifies the concept. But particles will align themselves based on charge. Our atmosphere is a gradient of charge, today its roughly 400kv to 500kv+ from ground to the upper atmosphere. About every meter is about 100 volt difference. The pseudo crystalline structure we see in trees likely even forms as a result of this, which makes wood Piezoelectic. Similiarly we see naturally occuring piezoelectic material appear in many aspects of life. Including bone.
