So glad to see some validation that my family isn't (totally) crazy. We always bought the cheapest cut, stabbed the hell out of it, (bit of tenderizer maybe, which is mostly just MSG (yummm, don't hate on MSG)) and my friend who was a line cook / aspiring chef laughed and took a video of me to send his boss. No matter which you like better this is the first video I've seen where people at least tried a method my dad taught me. Was starting to think he was crazy ;) well he his, but ya know.

One clue about which is more tender is clearly shown in the time it took y’all to chew each piece. Don’t know if y’all noticed but it took longer to chew the steak on the right than on the left. Interesting comparison; thanks for it!

Just wanted to thank you. I bought some of your beef rub and also did the salt brine on a $10 ribeye. It turned out to be the best steak I have ever made and one of the best steaks I have ever had. Getting some additional seasonings tomorrow. You are the man

I salt every steak and cook on a Kamada Joe, everyone that has watched me do it thought I had lost my mind until they taste the steak. I have found that the best salt time has been 15 minutes per 1/4" thickness, rinse very well. They never turn out too salty. I have been doing this for about 3 years, will not bother cooking a steak without it.

Kosmo - Buddy, you're spot on with the salt brine. Anything longer than a 20 minute salt brine and all you've got left is pieces/parts. Very nice cook! Kudos to ya!

So I did this with 4 different combos (Steak rub challenge). 6 adults 4 kids where present
1. Swine life Grit and grind
2. Killer hogs AP and steak rub
3. Big poppa smokers Cash cow
4. Kosmos Texas beef and Cow cover hot.

Unanimously all adults and kids picked Kosmos. It just had something the other ones didn’t. Killer hogs was second.

Salt brine. Have to try that. I have always seasoned the steak, and then fork tenderize it. I let it rest for 15-30 minutes depending on the steak. Bone-in and thicker steaks get a longer rest.

I use lime juice to tenderize. It breaks down the muscle tissue. Fresh lime juice on steak, icebox for 4 hours, take it out let it sit until room temperature, season cook and enjoy a steak you can cut with a fork.

I like to use the fork technique and submerge the steak in orange juice. The acid in the OJ emulsifies the fat but doesn't completely get rid of it so you still get the flavor when grilling.

being a texas boy this is something i didn't pick up until i was stationed in hawaii. take a pineapple. entire one, skin and all. just cut off the top. blend it up skin and all with water, use that as brine for *any* protein. it breaks down protein strands, making them tender. Just rinse well after 10 min in brine then grill.
