This sambol Vadai is Sri Lankan traditional snack. It’s famous from Matale.
This Sri Lankan pol sambol vadai is made with leftover Rice and freshly grated coconut.
I have given detailed step by step easy method. It’s very delicious.

I will share my mother’s recipe of her famous Sambol Vadai. My mum made this Vadai every Ramadan. It can be served with a tea-time snack and for Iftar in Ramadan.
One of my favourite Sri-Lankan recipes!

INGREDIENTS:
For making dough;
- Cooked Rice (Leftover rice) - 2 cups
- Baking Powder - 1 tsp
- Salt - ½ tsp
- Coconut Water - 200ml
- Maida Flour - 2 cups
- All Purpose Flour - 2 cups
- Water - 100ml

For making sambol;
- Crushed Chilli - 1 tsp
- Red Chilli Powder - ½ tsp
- Salt to Taste
- Maldives Fish Chips - 2 tsp (optional)
- Fresh Grated Coconut - 2 cups
- Small Red Onion - 1
- Green Chillies - 2
- Lime - 1

- Oil - ½ Litre (for frying)
