I liked how you mentioned that the density of the cheese would mean that the moon would expand in volume. I would have liked to hear about how the size changed after the moon became a carbon core. I'm pretty sure it would have lost a significant portion of its mass by that point also, so you could go into detail about how that would affect its orbit and effect on the oceans, etc.
