The second method did a good job, some ocr software is a bit hit and miss.
Some pdf readers can allow you to convert a picture scan to a pdf of text, copy and paste then allows you to add it to a doc.

How do you get the 'send to OneNote' thing to pop up? I've gotten the extension in the Microsoft store but I still can't get it to work.
