Keto Cheese Danish
Dough:
1 1/4 cup shredded mozzarella cheese (140 g)
6 Tbs. Almond Flour (30 g)
3 Tbs. Coconut Flour (22 g)
1/4 cup Alternative Sweetener ( I use Lakanto granular) (48 g)
4 Tbs. butter (melted)
1/2 tsp. Baking Powder
1/4 tsp. Xanthan Gum
1 Tbs. Psyllium Husk
1/2 tsp. Vanilla Extract
1 egg (room temp)
Filling:
6 oz. Cream Cheese (softened)
1 tsp. Lemon Juice
1/2 tsp. Vanilla Extract
1/4 cup Alternative Sweetener (can use powdered or granular) I used lakanto granular monkfruit (48 g)
1 egg yolk
Frosting:
3 Tbs. Powdered Sweetener (36 g)
2 Tbs. Heavy Cream (more or less depending on consistency preferred) (1 oz)
1/4 tsp Vanilla Extract
Preheat oven to 400 degrees. Start with the filling, beat together softened cream cheese and sweetener until well combined add in 1 egg yolk, vanilla and lemon juice, set aside. Sift and whisk dry ingredients together. Melt the butter, whisk sweetener and vanilla into butter. Melt the cheese in the microwave in 30 second intervals until completely melted. Add in butter mixture and dry ingredients. If too stiff microwave for 10 seconds, add in the egg and combine well until it's a cohesive dough. Roll between 2 pieces of parchment paper into a rectangle approximately 10 inches by 13 inches. Cut dough into 12 squares, you can leave them like this and just push up the sides a little to keep the cream cheese filling inside, using an offset spatula, place onto a parchment paper lined baking sheet and top with the cream cheese filling, 1-2 Tbs. in each, if you do only 1 Tbs. you will have extra filling leftover but the danishes will look more professional and bakery like (and be less carbs!). Bake 10-12 minutes, rotating half way threw. Pull out when they are a nice golden brown. Or you can cut into nice danish shapes like a pinwheel, or make turnovers.

Trying to make keto pastries look exactly like the ones I've made in the past at my pastry shop jobs. Cheese danish are by far my favorite, delicious with a cup of coffee!

This was my first attempt at a fat head dough recipe and they turned out fantastic. It was just like I remember. You would never guess there was mozzarella cheese in the recipe. I have a lot of work ahead of me to master the folding technique, but thankfully the folds don’t effect the quality of taste. =) I also just want to give you kudos for giving credit to CJ for being the original creator. Can’t wait to make another of your creations.

I just made these cheese danish and they are great! Not as good looking as yours but very tasty indeed! How do you store these? It’s only me so I need to be able to come back for a few later. Can you freeze these for a later date?

I'm going to have a go at making these, but don't have psyllium husk. Could I substitute it for a protein powder or something else? (Also I'm not really supposed to have Almond, but it's SO hard to find a pastry dough without it and these just look so amazing lol)

Can you recommend a good quality hand mixer? I hate taking out the heavy kitchenaid for small jobs, but my hand mixer is on its last legs. Thanks!
