That’s called poaching. It’s one of the most common methods of preparing eggs except most people avoid breaking the yolk.
You should add a splash of vinegar to raise the acidity and heat the water to slightly below a simmer.

You can cook anything in boiling water. When I was in college I used to boil frozen chicken from Walmart, shred it, and put it in rice shredded chicken and rice is still to this day one of my favorite classics. I recommend seasonings btw😂 Also throwing an egg or two in there with the “Warchercherchercher” sauce makes for a remarkable experience as well
