JIRO DREAMS OF SUSHI is a quiet yet enthralling documentary that chronicles the life of Jiro Ono, the most famous sushi chef in Tokyo. For most of his 85 years, Jiro has been perfecting the art of making sushi. He works from sunrise to well beyond sunset to taste every piece of fish; meticulously train his employees; and carefully mold and finesse the impeccable presentation of each sushi creation. Although his restaurant Sukiyabashi Jiro only seats ten diners, it is a phenomenon in Tokyo that has won the prestigious 3-Star Michelin review, making him the oldest Michelin chef alive. JIRO DREAMS OF SUSHI chronicles Jiro's life as both an unparalleled success in the culinary world, and as a loving yet complicated father of two.

Really good documentary. 85 year old Jiro has 75 years of Sushi experience, enough to become a master many times over, yet is still learning, practicing, and teaching. His humble attitude and incredible drive have helped him to preserve the art of being a Shokunin.

The things i learned of this film is the pursuit of perfection in the work we do. Today we need more people who loves their works, the kind of life that we made, work hard and have passion to make the things that we love to get the satisfaction of doing the things well, thats one of the part of the million of parts that we need to be happy in this life.

I´ll continue to climb, trying to reach the top. But no one knows where the top is! -Jiro-

Cooking absolutely is an art, and the best cooks are so good that they can seamlessly blend in a beautiful presentation to go along with the food that they prepare meticulously. What is the harm in making something look fantastic in addition to looking delicious? This guy is widely recognized as being the most talented sushi chef in the world, and I would take wonderful beautiful cuisine over your shitty chili bowl any day.

His son wants to. Go watch the movie. He has two sons. One already has his own restaurant. The other runs Jiro's restaurant and will inherit it when Jiro passes. They both love the work.

On the other hand, nobody except his son will be able to fill his shoes when it's time for him to take over. Sure, you can train an apprentice for years to follow along, but it won't be as intense a training as when you're taught exactly how things are done from childhood. Also, the name carries prestige and it would be an incredible waste to give that up.

Much of the "flavour" we taste does not only come from our taste buds. The smell of the food, the looks of the food and how it is presented, the texture of the food, and many other factors affect the way it tastes. Sushi is a very simple yet complex dish. I find that the proportion between the fish, wasabi, soy sauce, and rice is really a something that distinguishes from the best and the good sushi.
There are things people appreciate that others cannot sympathize. Do respect it, though.

It's the first Movement of Beethoven's 7th Symphony in A Major. Took some digging to find it but I felt like I've heard it many times before, yet it was not in my collections. I believe it's the first symphony he wrote completely deaf. Correct me if I'm wrong.

I really admire your self-esteem. There is a huge difference, astronomical difference in fact, between your sushi and Jiro's sushi. Just because you know how to put together ingredients for sushi doesn't make you sushi chef. That's like saying I can play just as good piano as Beethoven because I play piano every now and then in home. What you've been making is some boiled rice with raw fish dipped in soy sauce, not Jiro's sushi. May be if you try hard give and take 20 yrs, you might come close.
