1 (15 Oz) can sliced beets , drained, 1/2 cup liquid reserved
1 1/2 cups white sugar
3 eggs
1/2 cup olive oil
1 tsp vanilla extract
1 1/2 cups flour
3/4 cup cocoa powder
1 1/2 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips

Was a time I wouldn't touch beets, ..but I have learned to appreciate it. I am sure this recipe is very good. Enjoyed watching the process. Love the Ninja blender/mixer, had one, but gave it to my son when we left the Seattle area due to no room left. A kid would eat it up not knowing what a beet is!

Haha Sherry you and Dave are hilarious and when he sighed i felt sorry for him lol if i was told i was eating Beet chocolate cake i would never have eaten any lol even though i like Beets, in a chocolate cake sounds just wrong yet it certainly looked super delicious and as Dave gave it a thumbs up i have changed my mind am seriously thinking of making this now lol
