I track EVERYTHING. If my back office goes down, I have everything I need. All their info, their order dates, what they ordered, when I sent them a thank you & what was in it, their tracking numbers + it tells me if it was delivered, I use formulas to tell me how much people spend over specific timeframes (quarterly, yearly, etc), if I've had a join convo, if they're in my customer space, how they prefer to be contacted, etc
