Cub, while watching this video I had a brainwave for a project that might be up your alley. Since slimeball tennis is a no-go, what about Ghast Fireball Tennis? Hit a button to serve, pistons open up a ghast enclosure with a view to your opponent just long enough to shoot a fireball at your opponent, he volleys it back to you, first one to miss the volley loses the point. Might be difficult to make aesthetic, but you could probably build the enclosure into some bleachers or something.
