I’ve genuinely had customers come up to me and ask me to make their drinks 200°, which I would be okay with if the milk wasn’t trying to actively kill me in the process of making it. It becomes extremely unstable and I’d gotten some really bad burns early on in training.

Fun fact: overheating milk actually breaks down the sugars in milk and changes the flavor (makes it taste papery).

And yes, I know the drink in the video doesn’t have milk.

they ask for extra hot, then leave it to cool before drinking it, I'm a barista and I'm itching to put some hot sauce on their coffee whenever they ask me to make their coffee "extra hot"

I do order it "extra hot" if it's for my wife when I am picking it up to-go to bring it home for her. She drinks sugared-up lattes with 1 shot so it's not like she's a connoisseur, but still doesn't like to drink lukewarm. And many places underheat their milk for instant drinkability and quasi-liability concerns.

Part of the reason people ask for extra hot is so they can still drink it after travelling to their destination.

But there's a different kind of people that want it extra hot because they assume it's better, even though it's technically worse and they have to wait for it to cool down before drinking.

Equally ridiculous is being asked to make a latte "wet". I'm sorry WTF? You want me to add a load of water to the carefully made latte I just did?
