Silky Coconut Flan Recipe | Creme Caramel with Coconut Milk

i n g r e d i e n t s :

Caramel:
• 1/2 cup sugar
• 2 tbsp water
• 3-4 drops of lemon juice

Custard:
• 1 whole egg
• 2 egg yolks
• 2/3 cup sweetened condensed milk (1/2 cup if you like less sweet desserts)
• 1 2/3 cups coconut milk
• 1 tsp lime zest

Bake at 320ºF/160ºC for 1 hour covering with foil.

I used 5 4oz ramekins, but you can use a larger size.

m e a s u r i n g :

1 cup = 240 ml
1 tbsp = 15 ml
1 tsp = 5 ml

This was the best variation of flan with coconut milk + condensed milk I could find. I prob would reduce the condense milk a bit to sweet for me but the texture with the egg ratio was right, very jiggly. Also did it in a sous vide - 90C for 1 hr in 80 ml weck jar. This recipe fit 9 total.
