Minecraft: Console Edition - Glide (Dragon) - 1:17.600

Nearly 30 minutes of trying, and I get a time that was 9th on the Xbox One leaderboard (which it's not anymore). There's a better route, but the only person's channel I can be bothered to check doesn't use it in his video.

I considered getting the Ender Dragon head for this, but then I realized the Creeper head chest is impossible to access with one person in 60 seconds.
