• chilli flakes

This is cucumber kimcchi without the rice vinegar. We would slice the cucumber more thinly and serve it over cold rice. My favorite Korean childhood treat.

I will totally be making this! Minus the chili flakes. I’m a total wuss. But….that crunchy sound is so satisfying and I LOVE cucumbers. Yum!

Glad you enjoyed it. One tip though, you're using the wrong chilli flakes. The ones that Western people use are generally spicier, and more bitter than the Korean ones, and the grain size should be finer than those flakes, but not as fine as the powder ones (should be more like the size of your salt crystals). I'm assuming your're from Australia, which I believe you can easily find Asian markets in major cities. If you can't find the Korean gochugaru (chilli powder), the Chinese ones work just as well. Also sesame seed is just for garnish. Purely optional, and it's not gonna make or break the dish. Lastly, you don't have to slice your cucumbers that way. You can just slice them fully into circular discs. It's just a silly trend that people in Korea started doing for visual presentation. But I always grew up eating them as actual slices. Cheers.

love this... I make mine with soy sauce...black vinegar..sesame oil and an effff ton of spicy chili crisp...im telling you..the spicy chili crisp is awesome..has the added salt..galic & onion flavor... was thinking of adding some cracked szechuan peppercorn for some numbing effect.

Hmmm... I've never heard of his viral thing. Although I can guess where this inspiration comes from. My immediate guess is Korean pickles. I think they will taste much better than that. Koreans use a chili flake called gochugaru and it's a rich spice flavor not intended to be spicy. So in regards to that. You should try making "Korean Cucumber Banchan" they have it with lots of different veggies as well. Really nice and subtle flavors. Give it a go if you haven't tried it.
