The 2 basses sound identical on my studio monitors in my control room.

How do they sound acoustically? I’ve wondered about these hollow body’s and the way they might age. I wonder if the 65 may be more resonant due to the aging finish, or the wood losing moisture over time.

My uneducated assumption is that the newer one may sound tighter (probably not the best word) compared to the 65.

At first I was convinced I could hear more of a difference. But I'll be honest, I think it's mostly in playing differences between the two. I imagine the 2007 is much easier to play, which lends to more pick attack and greater confidence in the player, so, less dynamics.
