This is how i make sourdough! I thought i was the only one skipping stretch and folds lol. With six kids, I don't have the time for that, but I still want to give my kids the best possible bread.

Don't tighten the dough as you roll it, fold it onto itself a few times for a period of time, the crumb will thank you when you slice it
