I have a similar workflow for writing academic research papers. One thing that you may do is, on any reference in Paperpile press Command K it will generate citation key. I copy this citation key in all my notes for that reference.

Later when I'm in Google docs, I take these notes from Keep and then when I need to cite I just use the citation key in Paperpile, and it generates in text citation.
