I have a garden and just picked some kale and romaine lettuce for my salad. I massaged the kale, which makes it a darker green, but I finally wanted to know what’s the real reason this is done. Now I know. Better texture. Not sure if I care too much, but good to know.

Would there be any benefit in doing this if I'll just throw them in my Vitamix and pulverize the hell out of them for a smoothie?
