Here are some notes lol:
Bitterballen are like a small round bite size version of the croquettes (kroketten) they’re not made out of potato, but ragout/gravy. Like a flour and broth type gravy. They’re called bitterballen cause you eat them with beer, which is bitter.

Lumpia has become almost a Dutch word. Like we see a roll of dough with meat or vegetables and quickly call it a lumpia (loempia) we have many versions here. We even call Vietnamese spring rolls “Vietnamese loempia”

The layered cake called spekkoek has two version, the pandan one and the spiced one, yours was browner so I think it was the spiced one or mixed.

That lengkeng drink is longan, not lychee. But commonly confused. Main difference looks wise is that longan has a yellow outside and lychee is reddish or pink.

The stroopwafels, you need to put on top of the tea or coffee the remelt the caramel.

You’re right about the herring. They’re “pickled” in salt for a week or two and then frozen. Similar to our salted egg actually. That kills any germs or parasites. That’s why you said it reminds you of kilawin.

The bitterballen has no potato. Inside is a ragout of shredded beef, roux with bouillon, cooled and then breaded, frozen and then deep fried. Bitterballen are not bitter, they are eaten as accompaniment to bitters (alcoholic drink). Pulutan. 😊

beef randang is considered if not a maranao dish it's a muslim dish in a broad sense in southeast asian muslims, if im not mistaken considering Indonesia is dominantly muslim population. you can eat beef randing in muslim regions in mindanao.

Dutch people speak really good English I believe they also learn it from school, they were never colonized by Englabd and US, Infact they colonized
countries like Indonesia
