Just because French fries are a common food that anyone can afford and are cheap doesn’t mean they aren’t fancy. French fries from a culinary standpoint are more complex then a baked potato.

French fry requires more technology to operate than baking a potato.
At the steakhouse your paying for them cooking batches of whole potatoes in the Hopes you buy one.

I'll take French fries over a baked potato any day. At a steak house I'm not interested in the veggies

I have never _ordered_ a baked potato (or salad) ever in my entire life, and I probably never will. My side orders are almost exclusively fries, or double fries if I 'have' to pick two sides, at a steakhouse, but it has nothing to do with enjoying the fries' taste or texture. It's because I'm picky and also lazy. Most of the time I only eat, maybe, 2-7 of those fries. There have been maybe 3-4 times that I enjoyed the fries enough to eat all or the majority of them. In my opinion, most steakhouse's fries are either bland, overseasoned, dry, or too dense but I also don't want to go through the effort of preparing the baked potato the way I like while also cutting and chewing the big juicy steak. I guess I order them to use as a "pallet cleanser" to enhance the steak's taste and texture. Am I alone?
