And if you're too lazy to figure out the line of thought behind this:

You're taking 20 cards off the deck, then you place the selected card on the deck, and the 20 cards go back on the top. This means there are 20 cards on top of the selected card now.

Next thing is that the spectator takes off less than 20 cards -- let's say, 7. This guarantees the selection is still in your half of the deck; there are now 20-7=13 cards on top of the selected card.

While you know that you could count off 14 cards to get to the selected card, it would feel weird -- 7 might be a bad example here since it's exactly double the amount that my spectator took, but if he had taken 9 cards we'd have to count 12 -- there's no easy way to make this an obvious choice.

This is why he's dealing cards again -- it reverses the order of the cards. Remember that we have 20-7=13 cards on top of the selected card; these go to the table first to form the bottom of the stack. Then we get the selected card for a total of 14 cards on the table, and continue to 20. This puts 6 more cards on top of the selected card now -- which is exactly the 7-1 that we need for the reveal.

If you replace my "7" with any other number and adjust the other numbers accordingly, you can see that it always ends up like this.
