I am sure that the machine makes it easier, but you ou can do it without the machine as our mothers and grandmothers did it for centuries. Warm the milk up to 38°C. Mix it with genuine yogurt with true lactobacillus bulgaricus.(You can also buy dried bacterial cultures.) However, better use genuine and plain Turkish, Greek or Bulgarian yogurt. Close the container and cover it in a blanket or thick woolen clothes to maintain the temperature. It's going to take 3-4 hours. Keep it in a warm room or if possible near the fireplace or the oven. When done refrigerate and enjoy.
