Ep. 3 Bajra Roti and Lahsun Chutney (Pearl millet roti and garlic chutney)
I have had so many people ask me for a gluten-free version of rotis and it is here finally!! It is also just a very healthy grain so I urge everyone to try it. Complete source of protein and lots of nutritious goodness.
Also this garlic chutney is a flavour bomb in your mouth. Try it! Trust me.
After several recipe tests, I have found the perfect method to get a soft and fluffy bajra roti without it breaking apart and turning you crazy (that was me a few days ago struggling with a dough with no structure). Adding the bajra flour to simmering water releases the starch molecules and makes the dough gelatinous and easier to work with. This gives the easiest pliable dough and you get fluffy rotis every time.

RECIPE ingredients:
1 cup Bajra flour (pearl millet flour)
1 cup water
1/2 tsp salt
8-10 cloves of garlic
1 tomato
1 tsp ground cumin
1 tsp ground coriander
1 tsp red chilli powder
