I show you how you can cut complicated shapes of cookie by hand and how to decorate it with royal icing. Enjoy!

SUGAR COOKIE RECIPE

3 cups (450grams) all-purpose flour
1 teaspoon baking powder
1/4 tsp salt
1cup (226grams)butter, unsalted, softened to room temperature
1 cup (200grams) Castor sugar
1 large egg, room temperature
1tbsp vanilla extract
1tsp Orange Zest

* Sift together flour, baking powder, add salt, set aside.
* In a mixing bowl cream together room temperature butter and sugar, vanilla till light and fluffy scraping the bowl in between.
* Add egg and orange zest and beat until well mixed in.
* Now gradually in 3 additions add flour. Lower the speed of your mixer to low. Scrape the bowl well after the last addition and beat just until flour is combined.
* Scrape the cookie dough into a large bowl, and using your hands knead the cookie dough  for about 30 to 60 seconds, until dough comes together.
* Wrap the dough in a plastic wrap and refrigerate for 2-3hrs
* Preheat oven to 180C
* Roll the cookie dough into about 1/4 inch thick, between 2 pieces of parchment paper
* Cut out cookies using the Kitchen aid stencil . Place the cookies on a light colored baking sheet lined with parchment paper. Chill the cut outs in the fridge for about 15 minutes, or in the freezer 8 minutes.
* Bake for 10-12 minutes, depending on the oven, turn the sheet once half way through the baking.
* Let the cookies cool on the baking sheet for 5-7 minutes, transfer to cooling rack.
* Decorate cookies as desired with royal icing or other medium that you use.

ROYAL ICING RECIPE
1/4 cup (60ml) warm water
2 tbsp Lemon Juice
25 grams (2.5 tbsp) Meringue Powder
1/2 tsp Cream of Tartar
500 grams Icing sugar

* Ensure all tools are grease free, rub them with distilled vinegar and then wipe with a clean tissue.
* Sift the powdered sugar
* Mix  using a whisk lemon juice, meringue powder with warm water, until slightly foamy, add cream of tartar,  mix again and then add all the powdered sugar at once. Using your stand mixer, on the lowest setting, using paddle attachment, mix for 5 minutes scraping the bowl in between you can add your flavorings (vanilla, lemon,orange etc.)

hiya if anyones wondering there is a cookie cutter similar to the template on ann clark, i just used it and it works great

here in the recipe its written 450 gms (3 cups) of flour & in the sugar cookie video its says 440 gms (3.5 cups of flour)
kindly confirm how much to use exactly?
