Fun Fact: in a professional pastry kitchen these are quite easy to make because most of those kitchens are chilled, this is how you see so many videos of them handling chocolate and ice cream for so long without it melting!

Baked Alaska isn't hard bc of the last part, it's hard to make cause it'd take more than 20 years to bake the entire state of Alaska.

It's less tricky than tedious, taking several steps over a couple of days. Some tips:

Most commercial icecream is highly airated to help it stay soft while frozen. If you whisk it with a cake mixer for a minute or two, this will remove some of the air, making it slightly firmer & less likely to melt while baking the meringue. You can then press it into a mould & stick it back into the freezer for 24 hours to harden.

Brush the sponge with a little liqueur (Grand Marnier, Kirsch, Raspberry Liqueur, etc.) or melted jam just before adding the ice cream to help them stick together

When making the meringue: For a chewier, more marshmallowy texture, add a couple of teaspoons of vinegar to the egg whites & syrup. Alternately, add a teaspoon of Cream of Tartar for a crisper shell.

Lastly, when doing the meringue shell, make sure to properly preheat your oven before adding your bombe. Watch it closely for any little surprises as it bakes & you'll be fine.

Drizzle over some burning liqueur for cool factor & enjoy your Bombe Alaska.

In the culinary industry we use a torch to brown the meringue to avoid putting the ice cream in the oven and melting it 😌 Pastry Chef here 👩🏾‍🍳

The easiest way to ensure it doesn’t melt is to only put it into the oven for 2 minutes tops and then finish it off with a torch. It also helps to have it freeze for at least 24 hours before covering with the meringue so that the ice cream is rock hard. It’s very easy to do without melting if you do these steps

I once had a class project where we had to make some kind of edible representation of the layers of the earth. Being the slacker that I am, I made some layered jello. However, my best friend, being the person that she is, made a baked alaska dome for our middle school class project. I love her.
